Priming the Pump Importance of Priming the Pump It is essential to prime the pump of your Starbucks Barista® Espresso Machine • when using the machine for the first time • every subsequent time the machine is used, and • after steaming milk. This procedure removes air in the pump system and ensures that your boiler tank has enough fresh water to allow optimal performance of the machine. Not priming the pump may cause serious machine malfunction.

CAUTION When using the machine for the first time, or the first use of the day, be sure the machine is unplugged and the ON/OFF button is in the OFF position.

Instructions Step 1

Notes: • Removable parts are letters F and H-Q in the Description of Parts • To remove the water tank, remove the drip trays and swivel the steam wand out of the way, then pull the water tank out from the front of the machine being careful not to damage the intake hose.

2

Wash all the removable parts with warm water.

Brewing Great Espresso Four Fundamentals Selecting great coffee is only the first step in savoring perfect espresso at home. To help ensure a consistent, delicious shot every time you brew, Starbucks recommends following these four fundamentals: • correct proportion of coffee to water • proper grind • good water quality, and • fresh coffee beans.

Proportion Use 1 1/2 Tbsp (7g) of coffee for every espresso shot (1fl oz./30ml) you make. The proper dose nearly fills your filter insert to allow just a small gap for the grounds to expand as they become saturated, and brews steadily and evenly.

Grind Because espresso pours at such a rapid rate (about 20 seconds), a fine, powdery grind is needed to get the full extraction. For the most consistent, accurate grind at home, use a burr grinder adjusted to a “fine” setting.

Water Since every shot of espresso is mostly water, use fresh, filtered water (or consider using bottled water) for the best results. Water stored for long periods of time in your espresso machine becomes stale, and should be replaced frequently.

Freshness Espresso machines extract more of the flavorful coffee oils, so start with fresh coffee, and grind it just before brewing. Once brewed, enjoy your shot or incorporate it into your beverage within 10 seconds to fully savor its rich intensity.

Steaming Milk When to steam milk Steam the milk prior to brewing the espresso. This will ensure that you are making your drink when the espresso is at its peak flavor and temperature.

Materials needed To steam milk, you will need: • a cup • a small, chilled stainless steel pitcher • cold milk • a cooking thermometer, and • a damp cloth.

Before you begin Before steaming milk, you must prime the pump. Reference: See “Priming the Pump” on 1 - 8 for details.

Practice Best steaming results are achieved when you are in control of how fast the milk is moving around the pitcher. Practice is the key to achieving the type of foam and steamed milk you desire.

CAUTION It is normal for water or steam to drip from the brew head during steaming. To prevent injury, keep your hands and arms away from the water or steam.

Instructions Step

Action

1

Check to be sure the water tank is at least half way full.

2

Ensure that the Rapporto™ filter (O) is not on the machine. Note: This will prevent burning or pre-saturating of the ground coffee grinds during the steaming process.

3

Press the On/Off button (C) and wait for the Ready light (S) to illuminate.

4

Press the STEAM button (R) to ON. Results: The color on the STEAM button changes to green. The ready light goes off.

5

Wait for the ready light to come back on. Note: The ready light may go on and off while you are steaming milk. This is normal.

6

Ensure that the steam wand (E) is positioned off to the side of the machine. Caution: Use a damp cloth when handling the wand to prevent injury.

7

Turn the steam valve knob (B) open to release any initial burst of water or condensation into a cup. Note: Use caution as steam may cause burns.

8

Turn the steam valve knob closed.

9

Fill a chilled metal pitcher half full with very cold milk and insert thermometer into pitcher. Note: Milk will expand and the quantity in the pitcher will double in size with the addition of air as it creates foam.

Step 10

Action Steam the milk to get the amount of foam you want. To get maximum foam: • Hold the pitcher at a slight angle • Submerge the tip of the steam wand into the milk just under the surface • Open the steam valve knob to the point where the milk is moving in the pitcher like a whirlpool • As the foam volume in the pitcher increases, lower the pitcher to ensure that the tip of the wand is submerged just under the surface of the milk. • When the foam reaches the level you need, raise the pitcher to submerge the tip further into the milk. Ideal foam is made of small little bubbles, not large ones that look like soap bubbles. • Finish steaming the milk to the desired temperature (approximately 150O to 170O Fahrenheit, as indicated on a cooking thermometer inserted into the milk). To get minimum foam: • Hold the pitcher with the steam wand approximately one-half inch into the surface of the milk • Open the steam valve knob to the point where the milk is being steamed but the steam is not forcefully hitting the base or side of the pitcher. • Note: If large “soap bubbles” fill the pitcher, too much air is being introduced into the milk. Submerge the steam wand a little more so that a “whirlpool” effect is achieved. Perfect steaming occurs between the soap bubbles and steaming milk. • Finish steaming the milk to the desired temperature (approximately 150O to 170O Fahrenheit, as indicated on a cooking thermometer inserted into the milk).

11

Turn the steam valve knob to closed.

12

Wipe the steam wand with a damp cloth immediately after steaming the milk. Note: This cleans the wand and prevents any obstructions in the tip.

13

Place a cup under the steam wand and slowly open the steam knob to purge any milk that may be in the steam wand. Note: Use caution as steam may cause burns.

14

Press the STEAM button OFF. Note: The ready light may remain on.

Next steps After steaming the milk: • ensure that the water tank is at least half full. • prime the pump, and Reference: see Steps 8-13 in the topic “Priming the Pump” on 1 - 8. • brew the espresso. Reference: See the topic “Brewing Espresso” on 2 - 2 for additional information.

Descaling the Machine Why you need to descale your machine Water carries minerals and impurities that can clog the internal plumbing and affect the: • heating time • heating process • machine performance, and • overall taste of the coffee. Descaling (also called decalcifying) your machine helps to remove the build up and keeps your machine running smoothly.

When Use this procedure to descale your machine every 1 –6 months depending upon water quality.

Materials You can use one (1) of the following to descale your machine: • Starbucks Barista Cleaner and Descaler (available in most Starbucks stores) • another citric acid-based decalcifying agent (e.g., Better Brew Cleaner), or • non-pulp lemon juice concentrate. • a Phillips screw driver/Brew head cleaner (P)
