Food Fraud The foods factory are stress out about the money that they spend to produce food, the competition in the market and capture more clients. That`s why some people adultered the food, to reduced their cost of the product and received more profit. In Guatemala have a lot of this problems. Actually the government without the business owner created a lot of regulations food to help and change this problems. Despite of all the regulation food that exist in all the word this problem still happened. The history of food adulteration it can divide in three period: 





First: this period span of the beginning of the word to the turn of the century XIX. They eat all that the earth bring and they don’t care what they consume. In this moment the food adulteration doesn’t represent a problem. Second: span of the century XIX to end of the Second Word War. In this period the adulteration were in amount. One`s of the reason is that the need to endure the lifetime of the food. For example they used lead in the candy’s, crushed brick mixed in the pepper, lime powder mixed in the sugar glass, sulfuric acid instead of lemon juice, mahogany sawdust mixed in the coffee etc. Actually in Guatemala still happened. In the end of the First Word War the chemical annalistic was more developed and they reduced this problems. Third: Correspond this decades. New techniques of treatments of food and new additives that produce dangerous in the health of consumer produce that more exist more controls of food product.

The most popular adulteration in the actually were:     

   

20% more of water in the milk. Reduced the concentration of milk. Substitution of milk fat to vegetable fat. The vegetables fat is cheaper than milk fat. The milk of poor quality add phenolphthalein to reduce microorganism contamination however this is dangerous of health consumers. Bread`s factory add dyes and reduce the concentration wheat to resemble of wholemeal bread. In the meat have mixed a lo t of species, diferentes concentration of water/protein/ or protein/collagen, have a lot of fat to modificated the weight, add of the limits of aditivies, to conserve more the meat and look like fresh meet, this additves find the nitrites and nitrates that reacted whit other components of the meat and produce nitrosamine that produce cancer. Soda, candies, jams, chocolates, juices, prosecced fruit and energy drinks have more sugar that allowed for the heath of people. Mozzarella chesse add cornstarch to reduce the concetration of cheese. Jams have fruit that didn’t apperar in the ingredients. Wines have dyes, lime and plaster to improve the color.

Most of this adulteration produced secondary health effect many of this are, intoxication, kidney stones and cancer. One of the most shocking news in 2008 in China found melamine in infant formula milk. The melamine caused the death at least six children and harmed thousands of others. This problems can be change if they assume responsibility, and awareness for the people.
